Tapa + Sinangag + Itlog = Tapsilog
A tapsilog is a combination of tapa, sinangag, and itlog.
Tapa is a cured meat, usually beef cut into strips and prepared by mixing salt and other spices which also helps preserve the meat. I have tasted tapang kalabaw (carabao) before and it was delicious. Sinangag or fried rice, of course, is also present. And the pritong itlog or fried egg.
Don’t forget the suka or vinegar dip for a complete tapsilog meal!
